It’s a brilliant bit, and I say this as a food writer who was born and raised in Chicago. I grew up on deep dish. I love deep dish. If you can’t find the humor in this, I can’t help you.
What’s *sad* is how many Chicagoans are so sensitive about deep dish that they’ve spent the past 20 years retconning this whole “deep dish is tourist pizza” BS. And I could never prove it, but I have a strong suspicion that this segment played no small part in that bit of revisionist history.

When coworkers are in town from NYC…I offer to spread ketchup on cardboard so they feel at home.

We in Chicago eat tavern style pizza far more often than deep dish. Nevertheless we will still fight John Stewart for this.
