I had to look into it, because it didn't make any sense. I assumed he had died during the filming, but no, he's had a long and storied career being a stunt coordinator through at least 2024. He's done Knight Rider through to The Dark Knight Rises.
I would love more information, but based on what I've found it just appears they truly appreciated the work he did 25 years ago, and I'd love to appreciate it again. The jousting was fantastic (as is the whole movie) and very real.
